1 hen or 6 chicken breasts
8 - (6-in.) tortillas
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 can Ro-Tel tomatoes with green chilies
1 c. chicken broth, reserved from cooking chicken
1 (med.) onion, chopped
2 c. Monterey Jack or Cheddar cheese, shredded

Directions:
Directions:
Cook chicken until tender; removed from bone and cut into bite size pieces. Mix soups, tomatoes, broth and onion. Tear tortillas into small pieces. In a 2 qt. casserole dish, layer tortillas, chicken, and the soup mixture . Cover with cheese. Bake at 300 for 1 hr. Should be juicy when done.
