Ingredients:  
1 bag great northern beans (softened by soaking), rinsed
Water as needed
1/4 cup olive oil
5 cloves garlic (more or less to taste)
Salt & pepper as needed
2 boxes of pasta varieties - whatever you have on hand *
1 large can stewed or diced tomatoes (unseasoned)
1/3 cup chopped parsley

Directions:
Directions:
In soup pot, saute garlic in oil for a couple of minutes. Add beans, stir. Fill pot 3/4 full with water. Add salt. Bring to boil, then reduce heat and simmer for 2 hours or until beans are soft. Add pasta, stir, and continue simmering until pasta is done to your liking. Add tomatoes and parsley; stir. Serve while hot.

* add more or less pasta depending on how 'thick' you want it - soup or stew, depending on your preference. We prefer thicker.

This recipe is great, almost better, as leftovers!
