Flan Filling:

1 (8-oz.) package of cream cheese
3/4 c. coconut milk
1 c. evaporated milk
7 eggs
1 tbsp. light rum

Caramel:

1 cup sugar

Directions:
Directions:
Prepare caramelized pan. Melt 1 c. sugar in a non-stick pan, over low heat. Watch very carefully, if it burns you will have to start over. It just needs to melt. When melted, pour IMMEDIATELY into a metal pan and swirl around to cover the bottom and sides. Do this very quickly because once it starts to cool, you're toast. Let it cool before you add the egg mixture.

Flan Filling:

Blend all ingredients together and carefully pour into caramelized pan. Bake at 350 in a bain marie (water bath) for about 50 minutes or until golden and a knife comes out clean. Cool completely and then invert onto a large serving plate. I garnish with fresh pineapple and mango, but any fresh fruit works really well.
