4 boneless skinless split chicken breasts
8 Roma plum tomatoes, chopped
4 small zucchini cut into 1/2 inch slices
1/2 cup basil pesto (can be store bought or homemade)

Directions:
Directions:
Cut four 18"x12" pieces of heavy duty aluminum foil.
Spray with cooking spray.

Place 1 chicken breast, 1/4 of tomatoes, and 1/4 of zucchini on each piece of foil.

Spoon 2 Tbsp of pesto over each.

Fold foil to form a pouch. Leave some space for air and expansion.

Bake over coals on the grill for 20 to 25 minutes or until the juice of the chicken is clear.

There are just as good cooked at home in a 400 degree F oven for 25 minutes.

When done, place foil packet on a plate and cut an "X" in the foil. Fold back foil and eat.
