1 1/2 c. sugar
2/3 c. shortening or butter
3 eggs
1 1/4 tsp. vanilla
1/4 tsp. salt
1/2 c. cocoa
2 1/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 c. water or beer
1/2-2/3 c. sauerkraut (chopped/rinsed/drained well)

Directions:
Directions:
Preheat oven to 375. Cream together sugar and shortening. Add eggs, mix well. Then add vanilla, salt and cocoa and mix together. In a separate bowl, sift together flour, baking soda and baking powder. Alternating, add the dry ingredients and water or beer and mix. Fold into sauerkraut by hand. Bake in greased and floured pans for 35-45 minutes. This will make one 9x13 inch sheet cake or a two-layer cake. The cake is moist and chewy. You can frost it with your favorite frosting, although sour-cream or cream-cheese icing is recommended.
