4 boneless/skinless chick thighs
8 teaspoons Dijon mustard
2 teaspoons thyme
1 zucchini cut into thin strips
1 yellow squash cut into thin strips
1 sweet potato, peeled and cut into strips
1/3 cup butter or margarine melted
Salt & Pepper to taste

Directions:

Preheat oven to 450.
Tear off 4 sheets of heavy duty aluminum foil.
Fold each piece in half length wise and crease
Unfold and set aside.

Place 1 chicken thigh in the center of the foilsheet
Spread 2 teaspoons of the mustard over each thigh and sprinkle each with 1/2 teaspoon thyme.
Divide Zucchini, yellow squash and sweet potatoes evenly on on the chicken and drizzle each with 1 tablespoon of the melted butter. Season with Salt & Pepper.
Fold the packets and seal.
Bake approx 20 minutes or until the chicken is no longer pink inside.
