Put into mixer bowl:
5 tsp salt
1 cup sugar (can use 1/2 honey)
1 1/2 cup powdered milk
2 1/2 T shortening

Add:
5 cups hot tap water

Sprinkle 2 1/2 ! yeast over all. When dissolved, add 7 1/2 cups flour.

Directions:

Mix with dough hooks on low for a few seconds.

Add 6 1/4 cups flour or until dough leaves sides of bowl. Turn on highest speed and mix about 3 minutes.

Let rise until it comes to the top of bowl. Turn on mixer and beat down. Let it come to top again.

Take out of mixer and divide into 4 portions. Let rest 10 minutes.

Put in greased pans and let rise.

Bake 10 minutes at 425 then at 350 for 20 minutes.

This was recipe for Bosch mixer, but could be used for any stand mixer with dough hooks.
