1 lb. lean ground beef
1 (10-oz.) pkg. spinach, thawed & drained
1 (8-oz.) pkg. no fat cream cheese
1 (4 1/2-oz.) can Ro-Tel, including liquid
1 c. low fat shredded Cheddar cheese
2 c. Picante sauce, divided
2 rounded tsp. ground cumin
12 (7") flour tortillas, no fat
1/2 tsp. salt

Brown beef breaking into sm. pieces and then drain off excess fat. Add one c. Picante sauce, spinach, 1 1/2 tsp. cumin and salt to beef. Cook and stir five min. until most of liquid is gone. Add cream cheese stirring until just melted. Spoon filling down center of each tortilla; roll and place seam down in 13" x 9" pan sprayed with cooking spray, sprinkle a bit of cheese over enchiladas. Combine tomatoes, remaining Picante sauce and cumin and spoon over enchiladas. Cover and bake at 350 for 15 - 20 min. or until heated through. Remove from oven and sprinkle with remaining cheese, return to oven until melted.
