1 loaf sweet French baguette, slices
2 large tomatoes, chopped
1/4 lb. Mozzarella, finely chopped
1/2 red onion, finely chopped
1/4 cup chopped fresh basil
2 Tbls. capers
1/4 cup olive oil
2 Tbls. balsamic or red wine vinegar

Preheat over to . Lay out sliced baguette on a baking sheet. Toast in over for 10 to 15 minutes or until lightly browned. Preheat broiler. IN a large bowl, combine tomatoes, mozzarella, onion, basil and capers. Stir in vinegar and oil. Season with salt and pepper. Top toasted bread with the mixture and place on baking sheet. Broil until cheese melts. Serve hot!
