3 eggs
1/2 cup vegetable oil
2 cups sugar
2 tsp. vanilla
2 cups shredded zucchini
1 cup crushed pineapple, undrained
3 cups flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 1/2 cinnamon
3/4 tsp. nutmeg
1 cup raisins
1 cup chopped nuts

Directions:

Beat eggs, oil, sugar, vanilla until thick. Stir in zucchini, pineapple, flour soda, salt, baking powder, spices raisins, and nuts. Blend well. Pour into 2 greased loaf pans. Bake @ 350 for 1 to 11/2 hours. Check occasionally.
