1 large can Ortega green chilies, sliced into long strips
1 lb. shredded jack cheese
1 lb. shredded cheddar cheese
4 egg whites, stiffly beaten
4 egg yolks
2/3 cup evaporated milk
1 Tbls. flour
1/2 tsp. salt
1/8 tsp. pepper
3 large tomatoes

Directions:
Directions:
Preheat oven to 325. Combine chilies and cheeses and put in a 9x13 buttered pan. Beat egg whites until stiff. Stir egg yolks, flour, milk, salt and pepper. Stir into egg whites. Pour mixture over cheese and chilies. Use fork to ease milk thru. Bake 1/2 hour. Slice tomatoes and lay on top of casserole then bake another 1/2 hour. Casserole will only be about 1" high.
