3 garlic cloves, unpeeled
2 c. packed fresh basil
1/2 c. extra-virgin olive oil
1/4 c. pine nuts, toasted
1/4 c. grated Parmesan Cheese
2 T. fresh parsley (optional)

Directions:
Directions:
Toast the garlic in an 8-inch skillet over medium heat, shaking the pan occasionally, until fragrant and spotty brown, about 7 minutes. Transfer the garlic to a plate an let cool before peeling. Process the peeled garlic, basil, oil, nuts, Parmesan, and parsley (if using) on a blender or food processor until smooth. Season with salt and pepper to taste. When tossing with pasta, add some of the pasta cooking water as needed to loosen the consistency of the pesto.

This Pesto is so tasty! All 4 of our kids LOVE it (and it's green). It makes enough to coat 1 lb. of pasta. I will also use it to make a Pesto Cream Sauce and add shredded chicken to it.
