1 head Romaine lettuce
1 T minced parsley
1 can mandarin oranges (11 oz)
1/4 cup toasted sliced almonds
2 green onions sliced with tops (optional)

1/2 c oil of choice
1/2 c wine vinegar
1 tsp tarragon
1/2 tsp salt
1/8 tsp pepper
3 T sugar
1/2 tsp Dijon mustard

Combine salad ingredients reserving almonds for the top of salad

Beat vinegar into spices with wire whisk. Slowly add oil until a light and creamy color. Let stand at least 20 before serving.
