2 8 oz. packages of Sharp Cheddar Cheese
1 2 oz. jar of diced pimentos, with juice
3 Tbsp. sugar
1 1/2 tsp. salt
1/3 to 1/2 cup mayonnaise

Directions:

Mix all ingredients together and chill. Serve with crackers or celery or make into small sandwiches.

I prefer the extra finely shredded sharp cheddar.
