3 eggs
1cup oil
2 cups sugar
3 cups flour
teaspoon baking powder
2 cups Zucchini, grated ( if frozen include the juice)
3 teaspoons vanilla
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon cinnamon
1 cup nuts ( optional)
cup wheat germ
1 tablespoon honey

Directions:
Directions:
Mix all together. Bake 1 hour or until done at 325 degrees. Makes 2 regular loaves, 5-6 small loaves, or 6 dozen mini-muffins.
