1 quart cream
1 vanilla bean (can substitute 1 tsp. vanilla extract)
1 c sugar, divided
6 egg yolks

Directions:
Directions:
Preheat oven to 325. Slice bean lengthwise and scoop out seeds. Cut out the pod into pieces and add seeds and pod to the cream in a saucepan. Bring to a boil over medium heat. Once boiling, remove from heat and set for 15 minutes. While cooling, whisk yolks and sugar until blended and it turns a light yellow. Strain out the bean pod pieces from the cream and add the cream, a little at a time. Continue stirring until well blended. Add the mixture to ramekins placed in a water bath. Bake for 40-45 minutes.

Before serving, sprinkle remaining cup of sugar over the brulee and carmelize using a torch or by placing under a broiler.
