Beef filling:
2 pounds lean beef roast
one 15 oz can diced tomatoes
one package chili seasoning
one small can refried beans
1/2 pound grated Jack Cheese
one large can enchilada sauce

Directions:
Directions:
Place first three ingredients in crock pot. Let cook all night on low. Flake beef with fork until it is all mixed together. Set aside. Drain if necessary. add beans and cheese while still hot and let them blend together.
Place 2 to 3 table spoons of this mix on a small flour tortilla
and roll up tightly and place in bottom of baking dish, seam side down, with enough of the enchilada sauce to cover the bottom.
after filling the pan, cover the tortillas with the rest of the sauce . Top with more shredded cheese and bake at 350 degrees untill hot and bubbly.
