2 lbs. red kidney beans
1/2 c. olive oil
2 slices thick bacon
1 or 2 T. hot pepper or hot sauce
1 lb. smoked sausage
2 med onions
2 cloves garlic, minced
1 tsp. Worcestershire sauce
salt (to taste)

Directions:
Directions:
Fry bacon in olive oil, not brown. Add chopped onion and minced garlic; saute until onion is clear, not brown. Add beans, Worcestershire sauce, hot pepper and salt to taste. Simmer in a large Dutch Oven 4 to 8 hours on low heat. When beans are tender, add cubed, smoked sausage. Cook until done to your taste. Serve over rice.

Flavors improve after chilling overnight and reheating. Provide Tabasco sauce to season at table. French bread and hot coffee completes the meal.
