Fresh zucchini
Fresh yellow squash
1 tbsp grated onion
1 tbsp brown mustard
2 tbsp balsamic vinegar
1/4 cup or so olive oil

Directions:
Directions:
Peel squash into thin wide strips with vegetable peeler. Combine onion, mustard, and vinegar. Whisk in olive oil. Arrange squash on platter and drizzle the dressing over.
