2 oz thinly sliced roast beef 2-3 oz artichoke hearts light vinaigrette salad dressing 1 tbsp light mayonnaise 3/4 tsp horseradish 3/4 tsp lemon juice 1/2 tsp grated lemon peel 1/4 tsp snipped chives dash salt 3 fresh thinly sliced mushrooms tossed with lemon juice hard boiled egg, sliced pimento (optional) 1-2 slices crusty bread
Cook the artichoke hearts then marinate in the vinaigrette and refrigerate. Combine the mayonnaise, horseradish, lemon juice, lemon peel, chives, and salt. Spread the mayonnaise mixture on the bread. Top with the sliced roast beef, folded. Arrange the mushrooms, artichokes, and eggs in alternating rows on bread. Garnish with pimento if desired.
