4 pieces of chicken thighs (bone in & with skin)
3 - 4 carrots
3 - 4 stalks of celery
celery leaves
onion (small)
salt & pepper
Orzo

Directions:
Directions:
Put chicken thighs in large soup pot along with 4 carrots diced, celery diced & celery leaves. Cut onion into quarters and add to pot. Fill with water at least 3/4 of the way up. Bring to boil & cook on medium heat approx. l hour. You might have to add a little more water and adjust your seasonings. When chicken is thoroughly cooked, take it out remove the fat & cut up chicken into bite size pieces & put back in pot. Bring soup to another boil & add 3/4 - 1 cup of orzo & cook another 10 min. or until pasta is cooked.
