4 oz tuna, flaked
2 medium eggs, lightly beaten
1 slice bread, toasted and in crumbs
1 oz onion, finely chopped
1 tbsp lemon juice
1 tsp dried parsley flakes
1/4 tsp dry mustard1/4 tsp pepper

Directions:
Directions:
Combine all ingredients in a medium bowl and mix lightly until evenly distributed. Cover and refrigerate 1-2 hours or till well chilled. Shape into 4 equal patties. Place in non-stick skillet and cook over medium heat about 5 minutes on each side or until lightly browned and slightly firmed. Serves 2.
