1 bag frozen hash browns, shredded or cubed
1 small onion, chopped
16 oz container sour cream
1 large can cream of chicken soup
2 cups shredded cheddar cheese
salt and pepper to taste
1 sleeve townhouse crackers, crushed
1/4 cup melted butter

Directions:

Mix together all ingredients except crackers and butter. Toss butter with cracker crumbs and sprinkle over top of casserole. Bake in 350 oven 45 minutes or until bubbly and browned.

I think Aunt Norma was the first to bring this to a pot luck, but I can't remember. I've loved this ever since.

Usually I double this recipe for a crowd. It can also be a main dinner recipe by adding ham.

You can also lower the fat and calories by using fat free sour cream, omitting the butter, and using low fat cheddar cheese.
