1 15-oz. can pumpkin 1 12-oz. can fat-free evaporated milk 3/4 c. egg beaters (or 4 egg whites) 2/3 c. Splenda 1 t. vanilla 1/2 t. ginger 1/2 t. salt 1/2 t. nutmeg 1 t. cinnamon
Preheat oven to 425º. Spray 9" pan w/Pam. Mix all ingredients. Pour into pan. Bake 20 minutes then reduce heat to 350º and bake 45 minutes longer. Knife inserted in center needs to come out clean. 1/8 of pie = 1 pt. for Weight Watchers.
