2 lbs sunchokes (Jerusalem artichokes)
1 c mayonnaise
4 tbsp salad oil
4 tbsp vinegar
1/4 tsp salt
pepper to taste
1 c celery, chopped
1/4 c onions, chopped
2 hard boiled eggs, chopped

Directions:
Directions:
Cook sunchokes until just firm. (See directions in vegetables section of this book.) Cool. Cube into bite size pieces. Mix thoroughly mayonnaise, oil, vinegar, salt and pepper. Add sunchokes, celery, onion, and eggs. Toss lightly. Cover and chill at least 1-1/2 hrs before serving.
