1 lb sunchokes (Jerusalem artichokes)
4 tbsp butter
1 tsp lemon juice
salt & pepper to taste

Directions:
Directions:
Scrub sunchokes thoroughly. Cut into 1/2" slices. Melt butter in large frying pan over low heat until bubbly. Add the sunchokes and lemon juice. Saute over medium heat 10 minutes or until edges are golden brown and centers are tender. Stir occasionally to insure even browning. Sprinkle with salt and pepper. Drain and serve immediately.

Sunchokes are similar to potatoes after they are cooked. They are hard to find anymore. They are lighter than potatoes, not as starchy.
