2 lb. pork butt (boneless is easiest)
1 tbsp. oil
1 tsp. oregano
1 tsp. cumin
1 tsp. coriander
1 tbsp. chili powder
1 onion, quartered
1-2 cloves garlic, smashed
tortillas
desired toppings: guacamole, lime juice, cooked rice, shredded cheese, cilantro, etc.

Directions:
Directions:
In a roasting pan, brown roast on all sides. Add all other ingredients except tortillas and toppings and about 1 inch of water. Cover and bake 4-5 hours at 300. Cool slightly, then shred the meat with 2 forks. Return meat to roasting pan and mix with juices. Serve on tortillas with desired toppings.

I've never seen a 2-lb. pork butt. I end up getting a bigger one, but that's fine. Leftovers freeze well.
