1 lb. sweet or spicy Italian sausage
1 c. onion, chopped
2 garlic cloves, chopped
5 c. beef broth
1 c. water
14-oz can diced tomatoes
8 oz. can tomato sauce
1 c. carrots, thinly sliced
1/2 tsp. basil leaves
1/2 tsp. oregano leaves
1 1/2 c. zucchini, sliced
1 green bell pepper, chopped
8 oz. cheese tortellini
Grated Parmesan cheese, for topping

Brown sausage with onion and garlic. Drain fat. Add remaining ingredients except tortellini and cheese. Bring to a boil. Simmer until vegetables are tender. Add tortellini and cook just until pasta is done (it will float to the top). Serve sprinkled with Parmesan cheese.

We like the spicy sausage! It is flavorful enough that you can use less, or you can use the full pound and double the other ingredients.
