2 (lg.) eggs
2 c. shredded low-fat Cheddar, or mixture of Cheddar and low-fat mozzarella
1 c. corn kernels,
1 (4-oz.) can diced mild green chiles
1 tsp. chili powder
1 tsp. ground cumin
1 (9-in.) pie shell, unbaked
2 ripe tomatoes, thinly sliced
1/4 c. chopped cilantro, for garnish
1 c. salsa
sliced black olives, optional
scallions, optional

Directions:
Directions:
Preheat oven to 450. Combine the eggs, cheese, corn, chiles, chili powder, and cumin in a mixing bowl, and mix well. Pour the mixture into the pie shell, smoothing the top of the filling. (Add the olives and scallions if using) Bake for 25 min. or until the center is firm. Remove from oven, arrange sliced tomatoes attractively over tart, sprinkle with cilantro and serve with salsa.
