1 can (16 ounces) black beans, rinsed and drained
1/2 cup prepared chunky salsa, divided
1 garlic clove
1/2 teaspoon ground cumin
1/2 cup plus 1 tablespoon shredded carrot, divided

Directions:
Directions:
In food processor or blender, combine beans, 1/4 cup salsa, garlic and cumin; process or blend until smooth. Stir in remaining salsa and 1/2 cup
shredded carrot. Cover and refrigerate at least 1 hour to blend flavors. To serve, garnish with remaining 1 tablespoon shredded carrot. Serve as a dip with low-fat crackers.
