1 pkg. active dry yeast
1/2 cup lukewarm water
1 cup milk, scalded
2/3 cup sugar
1 tsp. salt
2 eggs, lightly beaten
1/2 cup mashed potatoes
6 cups flour (approximately)

Directions:
Directions:
Dissolve the yeast in the water. Combine the scalded milk, sugar and salt and let stand until lukewarm. Beat the eggs into the mashed potatoes and gradually beat in the cooled milk mixture. Add the dissolved yeast. Stir in enough flour to make a manageable dough. Turn onto a lightly floured board and knead until smooth, about 10 minutes. Place in a clean, greased bowl, cover and let rise until double in size, about 1 hr. Knock dough down and shape in to 2 loaves. Place in 2 greased 9x5x3-inch loaf pans. Cover with a damp cloth and let rise in a warm place until double in size. Preheat oven to 375F. Bake 40 minutes or until done. Makes 2 loaves.
