1-1 1/2 lb large or jumbo Shrimp- deviened and peeled-
2 Slices of onion- thinly sliced
2 tbsp fresh chopped garlic- jar is fine
1 tbsp Italian seasoning-
2 tbsp extra virgin olive oil
pinch of parsley

Directions:
Directions:
In a bowl add onion, Italian seasoning, garlic, parsley, and olive oil. In medium skillet on medium heat, add 1 tbsp extra virgin olive oil and shrimp. Saute for 2 min. Add sauce to skillet, bring to a boil. Turn skillet to low and cover for 5 mins.

Personal Notes:
This is really good with zuccini, squash, red pepper and green peppers. If you don't like actual onions, use 1 tsp onion powder instead- or none at all. We came up with this by accident- and I normally add more garlic. Also is good on the grill.
