3/4 c. sugar, divided
1/4 c. flour
4 eggs (separated)
1 1/2 c. coconut
2 c. milk
1/4 tsp. salt
1 tsp. vanilla
1 (9") cooked pie shell

Directions:
Directions:
Combine 1/2 c. sugar, with flour & salt in pot over medium heat. Gradually add milk, stirring continually. (I use a whisk.) Beat in the 4 egg yolks and cook over med. heat until mixture thickens. Remove from heat & cool. Add coconut & vanilla; pour into cooled pie shell.

Meringue: Beat egg whites until stiff peaks begin to form; gradually add 1/4 c. sugar. Place on top of cooled pie, swirling to make peaks & valleys. Sprinkle a sm. amount of coconut on top. Place pie in hot oven for a few min. until meringue begins to brown SLIGHTLY). Store in refrigerator. Serve cold.
