1 small to med. head of cabbage - shredded 1 green or red peppers - chopped 1 T. salt 2 c sugar 1/2 c water 1 c apple cider vinegar 1/2 bunch celery - chopped 1 1/2 tsp mustard & celery seed (optional)
Shred cabbage and sprinkle with salt - cover and let set for an hour or more.
Combine - sugar, water, vinegar, and boil slowly for 15 minutes. Set aside and chill till cold.
Add peppers, celery and seeds to cabbage - mix and pour vinegar mixture over all and chill.
