1 pound whole—milk mozzarella, chilled and sliced 1/4 inch thick
3 Tablespoons extra—virgin olive oil
3 Tablespoons vegetable oil
1 Tablespoon minced and drained bottled sun—dried tomatoes, plus 1 teaspoon of the oil
1/4 tsp. red. pepper flakes
1 Tablespoon minced fresh parsley leaves
1 teaspoon minced fresh basil leaves
1 teaspoon snipped fresh chives
1/4 tsp. minced garlic
fresh herbs for garnish if desired

In a wide shallow serving dish arrange overlapping slices of the mozzarella. In a small bowl, whisk together the olive oil, the vegetable oil, the tomatoes and. the oil, the red pepper flakes, the parsley, the basil, the chives, the garlic and. drizzle over the mozzarella.Let the mozzarella marinate, covered, at room temperature for 2 hours and serve it at room temperature, garnished with the fresh herbs if desired.
