3 tbsp. butter/margarine
2 tbsp. minced onion
3 tbsp. flour
1 c. milk or chicken stock
1/2 c. half & half
1/2 tsp. salt
1/8 tsp. thyme
1 tbsp. lemon juice
2 c. cooked, cubed chicken
Cooked rice
Desired toppings: sliced, sauteed mushrooms, chopped celery, grated cheese, chopped tomatoes, crushed pineapple, shredded coconut, slivered almonds, sliced green onion, chopped green peppers, chinese noodles, etc.

Directions:
In medium saucepan, melt butter. Add onion and cook over medium heat until tender, stirring often. Blend in the flour and cook and stir until frothy. Add the milk and half & half; cook and stir until the mixture comes to a boil and is thickened and smooth. Stir in the seasonings and lemon juice. Serve over rice and top as desired.

This recipe is from Karen Robison. We love it even if it's not really Hawaiian.
I usually have to thin the sauce with more milk.
