1 pkg. dry yeast
1 c. warm water
3/4 c. boiling water
2/3 c. instant potato flakes
2/3 c. shortening
1/2 c. sugar
1 c. hot water
2 eggs
1 1/2 tsp. salt
7-8 c. flour
3-6 tbsp. powdered milk
Oil for frying
glaze or powdered sugar for topping

Dissolve yeast in 1 c. warm water. Pour 3/4 c. boiling water into a large mixing bowl. Add potato flakes and blend with spoon. Add shortening; stir. Add sugar and hot water. Add eggs, salt, yeast mixture, 3 c. flour, and powdered milk in that order. Stir thoroughly. Add 4-5 more cups of flour to make a smooth dough. Knead 10 minutes. Cover and raise about 2 hours, or refrigerate dough and cut out when ready. Roll dough dough 1/2 inch thick. Do not roll too thin. A plastic tablecloth or oilcloth is ideal for rolling out doughnuts (but I used my oiled tabletop). Cut with doughnut cutter and let raise for about 1/2 hour. Fry in deep fat (about 375). Glaze or frost as desired.

Mom used to make these every Halloween, so every October I used to get cravings for them. Finally, this past year, I acquired a doughnut cutter and made a batch. Still yummy! I fed them to my seminary class at our Halloween party. Mom used to make them for our seminary classes sometimes, too, when we were assigned to bring doughnuts on scripture chase Friday.
