6 cups shredded zucchini
1/2 cup lemon juice
6 cups sugar
1 cup crushed pineapple, with juice
1 large pkg. apricot jello

Directions:
Directions:
Peel and seed the zucchini. Cook until clear and drain. Add remaining ingredients and cook on low heat for 6 minutes. Pour into jars and store in freezer.

We like the flavor; a good way to use the extra zucchini. Peach jello would also work, but we like the apricot.
