1 LB fresh in bulk or 1 10oz. package
3 Tbs. of butter or margarine
1/2 LB of mushroom cut into ¼” thick slices
Salt and Pepper
1 tsp. finely minced garlic

Directions:
Directions:
Bring enough water to boil to cover spinach when added. Add spinach and cook; drain well; when cool enough to handle extract most of the moisture. Chop coarsely. Melt 2 Tbs. of butter in skillet. Add mushroom and salt and pepper to taste. Cook stirring often over high heat until mushrooms are brown. Add remaining butter and spinach, cook stirring about 30 seconds. Sprinkle with garlic and stir.
