1 1/4 c. oil
3 c. cake flour
2 eggs
2 c. sugar
2 tsp. vanilla
1 1/2 tsp. soda
3 c. finely chopped apples
1 c. (or more) chopped pecans

Directions:
Directions:
Mix, then beat well, all ingredients except apples & pecans. Gently stir in apples & pecans. Pour into well greased tube or Bundt pan. Bake 1 1/2 hrs. in 350 oven.

Linda is the daughter of Jeane (Hollenshead) Finkbeiner & the late Charles Finkbeiner. She is the granddaughter of the late Charlie & Carrie (Wade) Hollenshead. I prefer to grate my apples.
