1 c. dried large lima beans
3 c water
1 lb bulk pork sausage
1/2 c. chopped onion
1/2 c. chopped celery
1/4 c. chopped green pepper
1 (16oz) can whole tomatoes, undrained and coarsely chopped
1/2 c. tomato sauce
1/4 tsp salt
1/8 tsp pepper

Directions:
Sort-wash beans; place in a large saucepan with 3 c water. Bring to a boil; cook 2 mins. Remove beans from heat; cover and let soak 1 hour. Place beans over medium heat; cover and simmer 1 hour or until beans are tender, adding more water if necessary. Combine sausage, onion, celery and green pepper in a large skillet; cook until sausage is browned, stirring to a crumble. Drain off pan drippings. Add beans, tomatoes, tomato sauce and seasonings; stir well. Spoon into a lightly greased, shallow 2qt casserole dish; bake at 350 for 20 mins or until thoroughly heated.
