Ingredients:  
Ingredients:  
2 cups plain flour,
1 tsp cinnamon,
1/4 tsp salt,
1 tsp baking powder,
1 tsp baking soda,
combine these 5 ingredients
1 1/2 c. crisco oil
2 c. sugar,
Mix well, add 4 eggs, 1 at a time and beat well,
Gradually add in dry ingredients,
add 2 cups of finely grated carrots, mix well and
pour into 3 eight inch cake pans which have been greased and floured and lined with wax paper.


ICING

1/2 cup butter
1 8 0z. package crean cheese
beat until light, gradually add while beating
1 pkg powdered sugar
1 tsp vanilla
1 cup chopped fine pecans

Bake at 350 degrees for 50-60 minutes. (I don't usually cook mine quite that long) Remove from pan and let cool completely before frosting.
