3 T. olive oil
3 cloves garlic, minced
1 (lg.) onion, chopped
3 c. zucchini, sliced
3 c.yellow squash, sliced
3 c. diced cooked chicken
2 (14 1/2-oz.) cans diced tomatoes
3 cans seasoned chicken broth
6 c. fresh baby spinach
Seasoned salt, to taste
fresh ground black pepper to taste

Directions:
In a lg. saucepan over med. heat, add olive oil, garlic and onions. Cook until onions are transparent and beginning to turn golden. Raise heat to medium-high, add zucchini and squash and cook until tender. Add chicken, tomatoes and broth. Bring to a boil. Reduce heat and simmer for 10 min. Add spinach. Season to taste with Seasoned salt and fresh ground black pepper.

Kay is the wife of Cecil Newman, the daughter of Virginia (Rogers) Hollenshead & the late John Hollenshead & the granddaughter of the late Charlie & Carrie (Wade) Hollenshead. This is an excellent high protein, low-carb soup. It is extremely easy to make, and you usually have these ingredients on hand. You can always substitute 3 c. frozen mixed vegetables for the zucchini and squash, and you can substitute frozen chopped spinach, thawed and squeezed dry, for the fresh spinach.
