cup unsalted buffer
cup olive oil
3 lbs baby spinach
Garlic to taste

Directions:
Directions:
Heat oil and butter in a wide 6-quart heavy pot over moderate heat until foam subsides, add garlic cook not allowing garlic to turn brown.
Add spinach, stirring, until just wilted and bright green, 2 to 3 minutes. Season with salt and pepper.
