1 bag (8oz.) European blend salad greens
3 Granny Smith apples, cored and cubed
1/2 c. sliced red onion
2 oz. (1/2 c.) crumbled feta cheese
4 slices thick-sliced bacon, cooked crisp and crumbled
1/3 c. slivered almonds toasted

DRESSING
2 T. cider vinegar
2 T. honey
I T. olive oil
I t. chipotle chile puree (puree canned chipotle chiles in adobe sauce in blender. Use
puree for this recipe; freeze remaining for other recipes)
2 cloves garlic

Directions:
In blender container, combine all dressing ingredients. Blend for 30 seconds or until well mixed. in large salad bowl, combine greens, apples and onion. Drizzle dressing over top; toss well to coat. Sprinkle feta, bacon, and almonds over top.
