Ingredients: 1 cup unsalted butter, cut into 1/2-inch cubes 8 ounces bittersweet chocolate, broken 4 ounces semisweet chocolate, broken (do not use chocolate chips) 5 large eggs at room temperature 1 cup sugar, divided 2 teaspoons vanilla pinch of.salt 1/3 cup light corn syrup

Directions:In a double boiler over warm water, melt butter and chocolates, stirring constantly until melted. Remove from heat and cool 5 to 10 minutes.
In large bowl of an electric mixer beat eggs, 1/2 cup sugar, vanilla and salt at medium-high speed for 8 to 10 minutes or until volume is tripled. In a saucepan, combine remaining ½ cup sugar and corn syrup. Stir constantly over medium heat till mixture reaches a full boil.
Resume beating the egg mixture on medium high heat. Add the syrup mixture in a slow, steady stream. On a lower speed. blend in the chocolate mixture.
Lightly butter the bottom and sides of a 9 or 10-inch springform pan. Line the bottom with waxed paper. Securely wrap the outside with heavy-duty aluminum foil. Pour batter into pan and smooth the top. Place springforrn pan in a shallow roasting pan and fill with 1 inch of hot water. Bake in center of oven at 350 degrees for 40 to 45 minutes; do not overbake. Remove springform pan from water and cool 30 minutes. Invert cake onto a serving plate; remove waxed paper. Chill. |
