2 gal. green tomatoes, cut in quarters or eighths
2 qt. onions, cut in quarters or eights
8 c. sugar
8 c. vinegar
3 c. bell peppers, cut in strips
4 T. salt
1 c. hot peppers, cut up
4 T. celery seed

Directions:
Directions:
Heat all ingredients to rolling boil. If lg. juicy tomatoes are used, cut vinegar to 6 c. Once rolling boil is achieved, turn off heat. Tomatoes, onions & peppers should still be holding their shape. Fill pt. jars with relish & seal.

Linda is the daughter of Jeane (Hollenshead) Finkbeiner & the late Charles Finkbeiner. She is the granddaughter of the late Charlie & Carrie (Wade) Hollenshead. This is good with fried fish and/or purple hull peas. I usually have juice left over. If so, I just cut up some more tomatoes & peppers and start all over!
