1/2 cup extra light olive oil cup vegetable oil
4 tablespoons rice vinegar
4 teaspoons fresh lemon juice
2 teaspoons Dijon mustard salt and freshly ground pepper to taste
2 cloves garlic
1 bunch watercress
2 heads Bibb lettuce
1/2 cup walnuts, broken into
pieces

Pour oil into a medium bowl. Slowly whisk vinegar and lemon juice into oil. Continue whisking while adding mustard. Blend well. Add salt and pepper. Puncture garlic cloves in several places with a toothpick and dip into vinaigrette. Place in a covered container for 2 or more hours to blend flavors. Remove garlic and set aside. Toss 1/3 cup vinaigrette with watercress, Bibb lettuce and walnuts. Store remainder of vinaigrette, garlic added, in refrigerator for 1 to 2 weeks.
