Crust:
1 1/2 c. graham cracker crumbs
4 T. sugar
4 T. butter, melted
Filling:
24 oz. cream cheese, softened to room temperature
5 eggs
1 c. sugar
2 tsp. vanilla
1 tsp. almond extract
Topping:
2 c. sour cream
1/2 c. sugar
1 - 2 tsp. almond extract
Garnish: 2 T. toasted slivered or sliced almonds

Preheat oven to 300. Mix all crust ingredients and press onto bottom of a 9 " greased springform pan. To make the filling, blend all ingredients well. Pour into prepared pan and bake for 1 hour or until set in the preheated 300 degree oven. Meanwhile blend topping ingredients. When cheesecake is set (1 hour), pour topping over the cake and return to oven for 15 minutes. Remove from oven and allow to cool uncovered overnight on a wire rack. To garnish, rim the top edge of the cake with toasted almonds. Loosen the sides of the pan; cover loosely and refrigerate.
