turkey giblets/neck
1/2 c.celery
1/3 c.onion
2 eggs
1 1/2 loaves of bread, cubed and dried
1 tsp. sage

Directions:
Directions:
Remove giblets from the turkey. Put the giblets and neck in a pot of water along with 1/2 c. celery and 1/3 c. onion and bring it to a boil. Make sure that the water covers the contents by an inch or two. As soon as the water boils, turn the burner down to low and simmer for 2 hours.
Remove the meat from the neck and grind or chop. Reserve the broth for later.
In a large pan combine the dried bread cubes, meat, celery and onions and add 1 tsp sage or to taste. Season with salt and pepper to taste. Add 2 eggs to two cups of cooled broth and combine with the bread mixture.
Stuff the thawed turkey loosely just before putting it into the oven to bake, or bake in a casserole dish for 1/2 hour in a 350 degree oven.
